Grilled Portabella Burgers

Portabellas (aka Portobellos) are overgrown brown cremini mushrooms. They’re gourmet looking, firm and meaty in texture. They really resemble a burger when grilled! Because they’re drier than most mushrooms, they shrink less, but brush them with olive oil before grilling or roasting to keep them from shriveling or turning tough. Grill lots of these delectable ‘rooms so you can slice leftovers into salad the next day. How long do they keep? Store portabellas a week to ten days packaged or in a brown paper bag in the frig if you buy them loose. Clean by wiping with damp cloth or soft brush.

Ezekiel buns? Serves 4

4 large Portabella mushrooms** stems trimmed 1-2 tb Pacifica sun-dried tomato mayo per bun

1 tb olive oil per mushroom 2 large bunches arugula or watercress**
1 tsp Spike seasoning. 1 red onion**, sliced
4 Food For Life Ezekiel 100% flourless sprouted whole grain buns*

Preheat grill. Brush mushrooms with olive oil – it’ll soak right in! Sprinkle each with a little Spike seasoning. Grill until tender, about 5-10 minutes per side. Alternatively, if you want to heat up the kitchen, you can roast mushrooms at 425 degrees for 15 min.

Spread mayo mixture on buns. Place grilled mushrooms, greens (easier to eat if you chop arugula or watercress) and slice of onion on bun bottoms. Cover with bun tops.

*In our freezer. You can toast them in a toaster or throw onto the grill for a minute or two.
